This is a really unspecific recipe because it's one of those great -throw in whatever you have hanging around- recipes. Love those because it helps avoid rotten produce in the fridge cv, also making it very cost effective! Love that even more. I won't provide nutritionals because it's such a loose recipe. But if you choose lots of veggies & a low-ish sodium salsa (homemade is awesome & you can control the sodium) instead of salad dressing, & a small tortilla- it can be very healthy! This dietitian says.
Ingredients: 1 tbsp canola oil 1 tbsp garlic, minced 1 bell pepper strips 1 yellow onion, diced 1 tsp each: oregano, cumin dash of cayenne pepper 1 lb of your choice of meat (grilled or shredded chicken or beans work great, I used leftover pulled pork) 4 taco sized flour tortilla (even better when whole wheat-but I haven't found one that rocks- any suggestions?) 2-3c Shredded undressed slaw mix (cabbage, carrots, cilantro) Additional vegetables (you could sautee zucchini with the peppers/onions, add cooked corn, tomatoes, cucumbers...) 1/2 c cheddar cheese, grated 1 c salsa (I used Trader Joe's green salsa) 1 lime | Directions: 1. In a medium fry pan, sautee garlic in canola oil for 1-2 mins, add pepper and onions. Add oregano, cumin, dash of cayenne right before taking off the stove. 2. Cook or reheat meat (the pork I used was just seasoned with salt and pepper-so do that!) 3. Heat individual tortillas on fry pan after removing peppers & onions. (you don't even have to wash the pan in between veggies & tortillas, but you DO have to spray with nonstick spray!) I also sprinkled a bit of cheese on the tortilla to melt (yes, Cafe Rio style!) 4. Add slaw, cheese, additional veggies, and salsa to tacos 5. Spritz with fresh lime juice & enjoy |
