Ok, so I love oatmeal cookies. Everyone tells me I'm weird for choosing an oatmeal raisin cookie over a chocolate chip cookie, so sue me! But, while almost all chocolate chip cookies are way good, good oatmeal raisin cookies are harder to find-because they have to have the cinnamon/nutmeg/cloves to be so incredible. So, if you're like me & love a spiced oatmeal cookie, use this recipe, if not a plain white cake recipe would be as good!
Oatmeal Whoopie Recipe 4 tbsp unsalted butter (at room temp) 1/2 c packed brown sugar 1/4 c granulated sugar 2 large eggs 1 tsp vanilla extract 1 1/2 c rolled oats (blended) 1/2 c whole what flour 1/4 c all purpose flour ~ 1/2 tsp baking soda 1 tsp ground cinnamon 1 tsp salt *makes about 48 2-in cakes ~You can just use all all-purpose flour, but the whole wheat makes it a bit sweeter & healthier! | 1. Preheat oven to 350 degrees 2. Using stand mixer, beat the butter and both types sugar for about 4-5 mins. Add eggs in one at a time, then vanilla, while still mixing. 3. Process 3/4 c of the oatmeal in food processor or high powered blended until flour consistency. 4. Add regular oats, flours, baking soda, cinnamon, and salt to blended oat mixture. Stir mixture, then add to wet ingredients. Mix until combined. 5. Using a spoon or #60 scoop, spoon batter onto cookie sheet. I always line my cookie sheets with a nonstick mat; you can spray it well or use parchment paper. Cook for 6-8 minutes or until golden brown. |
Cream Cheese Frosting 4 oz Neufchatel Cheese* (at room temp) 4 tbsp unsalted butter (at room temp) 3 1/2 c confectioners' sugar (or 1 16-oz box) 1 tsp vanilla extract | Add 1 cup confectioners sugar, all other ingredients to a stand mixer bowl. Beat well, slowly add remaining sugar to avoid it "poofing" (you know what I mean, avoid the mess!) |
Strawberry Compote 2 c frozen strawberries 1/4 c granulated sugar 2 tsp lemon juice 1/4 tsp lemon zest | 1. Add 1 c strawberries and other ingredients to small saucepan. Cook on medium heat for about 10 minutes. Add remaining strawberries, cook for additional 8-10 minutes. 2. Blend mixture to desired consistency (this will thicken it up a bit too) Use same recipe for blueberry compote, just replace the strawberries for blueberries-or any other berry really! |
