In the July spirit, here is a fun and tasty breakfast to celebrate our independence! Ok, I'm not providing a recipe here because I used leftover batter from a Blue Corn Hotcakes package from Christ's Kitchen in Spokane, Washington. I added goat cheese because the pancakes are a bit more savory than sweet, and fresh fruit to hit all colors. The corn pancakes are really crumbly & don't flip well, see the mess.... But that's life, so I'll be honest and share them as they are! |
Check out this recipe from Bobby Flay on the Food Network for blue corn pancakes. You can just make the pancake part & add whipped cream or goat cheese to top them, with syrup of course!
